Rai or raya or laha
is termed as mustard. The seed and oil are used as condiment in the preparation
of pickles and for flavouring curries and vegetables. The oil is utilized for
human consumption throughout northern India in cooking and frying purposes.
Mustard is used as a food flavoring and as a forage crop. It
has traditionally been used as an emetic and diuretic, as well as a topical
treatment for inflammatory conditions such as arthritis and rheumatism
